Raspberry Coulis with Blackberry Cupcakes

This Blackberry cupcake was from the food network and the link is below. We wanted to decorate the cupcakes with the Raspberry Coulis below drizzled over the cupcake and top with a fresh raspberry or we used frozen raspberries we previously frozen from our garden. We did use the Blackberry Cupcake recipe to make this cupcake.

Note: Blackberries are not very flavorful in the cupcake so you need a frosting that really stands out and make your cupcakes yummy.

Raspberry Coulis/Sauce

*1 tablespoon Sugar
*1 1/2 teaspoon cornstarch
*1/3 cup cold water
*1 1/2 cups Raspberries, fresh or frozen, smashed and strained from seeds

Combine the above ingredients in a sauce pan, cook on medium heat until thickened and strain through a fine mesh to remove and discard of seeds and solids. Place strained, cooled sauce in a pastry bag with small tip or pastry bottle and drizzle down frosted decorated Butter Cream frosted cupcake.

Note: You could use any boxed cake and follow the directions on the box. The same goes for making a Cream Cheese Frosting, you can buy it pre-made but I prefer the Cream Cheese Frosting linked below.

Make cupcakes according to directions and cool. Then frost cupcakes with a decorating star tip and pastry bag and squeeze out the frosting onto the center of the cupcake making a large mound and then drizzle on the Raspberry Coulis and top with a raspberry.

Roasted Garlic Chicken with Ranch Sauce

Pizza Crust

Proofing the Yeast:

*1 cup warm Water
*1 tablespoon Dry Active Yeast
*2 teaspoon Sugar, food for the yeast

In a small bowl add the above ingredients, let sit until bubbly.

Whisk together:

*1/2 teaspoon Salt
*1 teaspoon Garlic Powder
*2 cups Bread Flour, more if needed

Add:

*1 tablespoon Extra Light Olive Oil

Combine the above ingredients and knead into a soft ball. Roll out soft ball dough into a circle, until right size for your pizza pan. I used an extra-large pizza Pan. I like to use a pizza pan that has holes in the bottom and spray well with cooking spray. (You can also use a very small amount of corn meal on the bottom of pizza pan to help with sticking. )

Note: Fold over the edge of the pizza if you like a thick Crust.

Bake the pizza crust at 500*F for 5 minutes, then remove pizza crust from the oven adding the toppings and bake another 10 minutes.

Pizza Sauce & Toppings

*Frozen pre-cooked grilled Chicken Strips, warm according to directions or 2 Chicken Breasts cooked, seasoned with Garlic Salt and cut into strips/bite size.

Roast Garlic

*Roast 6 cloves of Garlic, minced
*1-2 tablespoons Extra Light Olive Oil

Add oil to cast iron pan, heat and add garlic, cook on medium-low heat just until they start to brown.

Garlic Ranch Sauce

*2 tablespoons All-Purpose Flour
*1/2 teaspoon ground Black Pepper
*1/2 cup Skim Milk
*1/4 cup Whipping Cream
*1/4 cup grated Parmesan Cheese
*1/4 teaspoon dried ground Thyme
*1/4 teaspoon dried Oregano
*1/2 teaspoon Parsley

Add flour to cold milk and cream and whisk together until smooth. Add the rest of the sauce ingredients and cook on medium-low heat in sauce pan until it is thickened. Add 2 Tablespoons of dried Ranch Dressing.

Pizza Toppings:

*Garlic Ranch Sauce
*Cooked Chicken Strips
*Roasted, minced Garlic
*10 Bacon Strips, pre-cooked and cut in bite size pieces
*3/4 cup Mozzarella Cheese
*1/4 cup very thinly sliced Red Onions, previously Sautéed in Extra Light Olive Oil, (sautéing onions is optional)
*1/4 cup Mozzarella cheese
*1 teaspoon dried Parsley, sprinkled on top of assembled Pizza

Assemble the pizza toppings in the above order as listed on partially baked crust and finish baking pizza in oven until cheese is bubbly or browning about 7-10 minutes. (Oven temperature 500*F.)
