Rainbow & Popcorn Pot of Gold

Happy St. Patrick’s Day! This is another treat from our St. Patrick’s Day Dinner.

Pot of Gold Supplies:

*Almond Bark, melt in glass measuring Cup, in the Microwave, in 30 second intervals
*Water Balloons, inflated and dipped in melted chocolate, my chocolate bowls were kind of thin, so you may want to let them dry and dip again in melted chocolate for a thicker bowl and let dry
*Pam Cooking Spray, rubbed on balloons, I forgot to do this so they cracked a little
*Wax Paper
*Cupcake Liners/cups
*Lime Jello-O Popcorn, Recipe found Here.
*Rolos
*Gold Foil Chocolate Coins
*Air Heads Extreme Sweetly Sour Rainbow Candy, I found these at the Maverick

After dipping balloons in chocolate and letting them dry, I put more chocolate on the bottom because it will be to thin, (put a 50 cent piece size amount of Chocolate on the wax paper, if you want a more of a pot type base. Mine were going in a cupcake cup so I didn’t worry too much about the size.) let dry again and then poke a hole in the balloon with a pin and remove balloon pieces, fill with desired popcorn etc….

Caramel or Mint Kiss Cookie

Caramel or Mint Kiss Cookie

Chocolate Cookie ingredients:

*2/3 cup Sugar
*1/3 cup Dark Cocoa Powder
*1/4 teaspoon Sea Salt
*1/4 cup plus 2 tablespoons Extra Light Olive Oil
*2 teaspoons vanilla
*2 tablespoons Whipping Cream
*1 Egg
*1 cup Flour

Cookie decorating:

*Caramel Hershey’s Kisses or Chocolate Mint Chips
*Chocolate Frosting, for adding chocolate kiss or frosting and topping with mint chips
*Green Chocolate Melting Discs/Wafers, melted and drizzled on cookies

Mix together the sugar and cocoa to eliminate any lumps in the cocoa. Cream together the rest of the ingredients adding the flour last. Add a little more flour to make into round shape if needed.

Bake the cookies in a preheated, 350*F oven for 9-11 minutes depending on the size of cookies. Remove cookies from the oven, cool and decorate as desired.
