Lemon Strawberry Basil Pasta Salad

A light and refreshing summer salad you will really enjoy at any picnic or get together with family and friends.

Lemon Strawberry Basil Pasta Salad

*1/4 cup Extra Light Olive Oil and 1 tablespoon Canola Oil

*Zest of 1 Lemon

*1/4 cup Lemon Juice

*1 tablespoon Balsamic Vinegar

*1 tablespoon Granulated Sugar

*1/2 teaspoon Sea Salt

*1/4 teaspoon Freshly Ground Pepper

*1 pound Faralle (Bow Tie Pasta), cooked and drained according to directions

*1/4 cup Fresh Basil, chopped

*2 cups Strawberries, sliced

*Poppy Seeds, optional

*Purple Grapes, halved, optional

In a mason jar add: Oils, lemon juice, balsamic vinegar, sugar, salt and pepper and shake until dissolved.

In a large glass bowl of your choice add the cooked drained pasta and toss in the; Lemon zest, basil, strawberries and optional ingredients if desired. Drizzle on as much dressing as desired.

Note: Strawberries will turn the pasta pink, so add just before serving or top pasta salad with strawberries right before serving.

Instructions
  1. In a quart Jar with a lid. Place the above ingredients into jar except for the Lemon Juice and shake all the ingredients until mixed well, then add the lemon juice and shake again. Refrigerate at least 30 minutes, shake and enjoy. 
  2. Simple Green Salad *1 bag Spring Salad Mix *2 cups Romain Lettuce, chopped *Tomatoes, Diced *1/2 cup Parmesan Cheese, grated, topping *Black Olives, sliced, topping *Roma Tomatoes, diced, topping *Optional: avocados, Mandarin Oranges, cooked Bacon, chopped
