Oatmeal Banana Chocolate Chip Cookies

*1/2 cup Sugar

*1/2 cup Brown Sugar

*1/2 cup Butter, room temperature

*1/4 cup Butter Flavored Shortening

*1 Egg, room temperature

*1 teaspoon Vanilla Extract 

*1 cup Ripe mashed Bananas, about 3 medium

*1 and 1/2 cups Flour, sifted

*1/2 teaspoon Baking Soda

*1/2 teaspoon Baking Powder

*1 teaspoon Cinnamon

*1/4 teaspoon Sea Salt

*1 cup Old Fashion Rolled Oats

*3/4 cup Quick Oats

*2 cups Semi-sweet Chocolate Chips or I like Ghirardelli Bitter Sweet Chocolate Chips, more like little chocolate wafers and add as many chips as desired

Directions:

Preheat oven 350*F.

Cream together in a bowl the sugar, brown sugar, butter and shortening.  Then add the egg and vanilla and mix until totally combined.

Stir in the mashed bananas into the creamed mixture, until incorporated.

Sift together in a bowl the flour, baking soda, baking powder and salt.  Stir 1/3 of the flour mixture into the creamed banana mixture, mix until combined.

Stir in Oatmeal and Chocolate Chips.

Use a cookie scoop, I used 2 tablespoon cookie scoop made 27 cookies.

Scoop 6 cookies per Silpat covered 1/2 baking sheet or use parchment paper. 

Bake in a 350*F.  12 to 15 minutes.  Allow cookies to set 1 or 2 minutes then cool cookies on cooling rack.

Grilled Pizza Spring Lettuce Tomato Ricotta Cheese

Note: We used Gas Stove place Long Grilling pan, it will cover 2 gas burners

Serves: 4

Dough

*1 and 1/2 teaspoon Dry Active Yeast

*3/4 cup Warm Water, 105*F. – 110*F

*1 tablespoon Sugar

*1 cup All-purpose Flour

*1 cup Whole Wheat Flour

*1 teaspoon Kosher Salt

*2 tablespoons Extra Light Olive Oil, more for coating grill and bowl

Pizza

*1/2 cup Ricotta Cheese

*2 to 3 cups Spring Mix Baby Greens

*1/2 cup sliced Red Tomatoes

*6 to 7 Basil Leaves, roughly chopped or torn

*Fresh Ground Sea Salt

*Fresh Ground Black Pepper

*Lemon Oil, see recipe below

*1/4 cup tablespoons Pine Nuts, toasted if desired

Lemon Oil (make while dough rises)

*1/2 cup Extra Light Olive Oil

*1 to 2 Lemons, peeled with as very little white pith as possible

In a Sauce pan, heat the oil on medium low heat with Lemon Peels. Simmer for about 5 minutes and set aside for about 20 minutes.

Instructions:

For making dough and Pizza:

1. In a 2 cup bowl add the yeast, warm water and sugar,set aside until bubbly.

2. Whisk together in a Large bowl add the all-purpose flour, whole wheat flour.

3. Add to the flour mixture the bubbly yeast mixture, stir together and knead the dough for about 8 minutes until smooth.

4. Remove the dough and oil bowl, replace Dough and Cover with a damp cloth and allow the dough to rise about 1 hour.

5. Preheat the oven 400*F.

6. Using a Gas oven using 2 burners, place a long grill pan.

7. After dough has risen punch down the dough and divide into 2 dough pieces.

8. Roll out each roll dough into a oblong shape about 12 inches in length. Note: I used both pieces, and I made one large oblong pizza, but I think making two separate is a better idea.)

9. Oil the grill well and medium high heat, heat grill pan until hot. Place on the rolled out dough onto hot grill and grill 2 to 4 minutes. Brush oil on the top of the dough and flip over the pizza and grill another 2 to 4 minutes. Repeat for the second pizza.

10. Remove from the grill on a cutting board and spread on 1/2 the ricotta cheese and 1/2 of above listed toppings in the order listed and drizzle with the lemon oil just before serving. Repeat again for the second pizza. Enjoy!
