Pizza Pocket Dough

*
*1   1/2 cups warm Water, 110 *F.

*2   1/2 teaspoons Instant Dry Yeast

*1 tablespoon Granulated Sugar

*4 cups Bread Flour, more if needed, sifted

*2 teaspoons Sea Salt or Kosher Salt

*3 tablespoon Extra Light Olive Oil

*1 tablespoon Honey

*1 teaspoon Garlic Powder

*1 beaten Egg, egg wash

In a stand mixer bowl add the water, yeast, sugar and allow to rise until bubbly. Using a dough hook add two cups of the flour to the yeast mixture on medium-low. Then add salt, garlic powder and drizzle in oil and honey.

Slowly add the remaining flour adding more to make a slightly sticky ball, mixing about 5-8 minutes.

Remove the mixing bowl with dough from mixer and cover with a damp dish flour cloth and allow the dough to rise until double in bulk about 1 hour.

Roll out the dough onto a floured surface. Cut the dough with a rotary cutter into rectangular shapes or use cookie (large) cutters square, rectangular or round. You will need to dough shapes for each pizza pocket. Fill them with the below fillings or fillings of your choice.

After filling the very center of a cut shape with filling choices, place a second cut shape of the same size on top of the first center filled dough shape. Seal around the edges of the enclosed pocket with a fork.

Place closed pizza pockets using a large tuner to lift on a Silpat covered 1/2 baking sheet and brush with the egg wash.
Bake in a pre-heated 450*F. oven for 10-12 minutes or until golden brown.

Fillings:

Stuffed Mushroom Cheese
:

*2-3 tablespoons Extra Light Olive Oil

*1/2 small onion, diced small

*2 cloves of garlic, pressed or minced

*1 16 ounce container Whole Baby Bella Mushrooms, sliced

*3 tablespoons White Cooking Wine

*Goat Cheese or Feta Cheese, crumbled (Goat cheese has a strong flavor so use sparingly) use as desired

*Sea Salt or Black Ground Pepper, to taste

*Fresh Mozzarella Cheese, small slices

Sauté the onions and garlic for 2-3 minutes adding the garlic the last-minute of sautéing. Add the sliced mushrooms and sauté for about 3-4 minutes and add cooking wine, cook the mushrooms until tender.

Layer dough cut pocket with slice of mozzarella, mushroom and goat or feta crumble cheese. See above.


Stuffed Pepperoni Filling
:

*Thick Spaghetti Sauce

*Mozzarella, Sliced or grated

*8 Pepperoni Minis
Optional meat fillings:
*4 ounces cooked Turkey Sausage

*Any other meats as desired like Canadian bacon, cooked chopped bacon and Taco Seasoned cooked Hamburger.

Layer in center of cut bottom dough pocket shape, in the center of dough starting with sauce, mozzarella and pepperoni or a variety of meats. Add second cut dough top. See above.

Berry Kiwi Crepes

*

*Strawberries, washed, sliced

*Raspberries

*Blueberries, washed

*Kiwi, peeled, sliced

*Yogurt Whip Dip Filling

*Sweet Crepes

*Squirt Cream, like can Reddi Whip, refrigerated or Cool Whip Topping, optional for topping made filled crepes

*Hershey’s Chocolate Topping or melted Chocolate Chips for drizzling over finished crepes, optional

Yogurt Whip Dip Filling

*
*2 cups Greek Vanilla Yogurt

*1 cup Cool Whip Topping, thawed in fridge

*1/2 cup Powdered Sugar

*1 teaspoon Vanilla

*pinch Salt

*Raspberry or Strawberry Coulis or Strawberry or Blackberry or Raspberry Freezer Jam, for Syrup to drizzle on crepes

Stir together in a bowl just until combined. Keep in fridge until each to use.

Filling suggestion
:

*
Fill the center of your crepe with a couple of tablespoons of yogurt whip dip filling and top with the above fruit. Fold over the two sides of the crepe making a log shape add a little bit of cream cheese to hold crepe closed or serve open. Top with squirt cream and fruit as desired. Enjoy

Sweet Crepes:

*
*2 Large Eggs

*3/4 cup Milk

*1/2 cup Cold Water

*1 cup All-purpose Flour

*3 tablespoons melted Butter

*2 1/2 tablespoons Granulated Sugar

*1 tablespoon Vanilla

*Cooking Spray

*Small non-stick Pan

*Thin Pancake Tuner or heat resistant Rubber Spatula/Scrapper

In a blender add the above ingredients and blend/pulse in the blender for about thirty seconds. Do not over-blend it will make a tough crepe.

*
Refrigerate the crepe mixture at least 1-2 hours to let crepe bubbles in the batter settle or can be refrigerated overnight.

*
Using a heated non-stick pan (omelet pan) sprayed with Pam or favorite cooking spray on medium low heat. Pour about 1/4-1/3 cup crepe mixture in the center of the pan and drizzle in a circle moving the pan until crepe mixture doesn’t spread any longer and cook for about 1 minute and flip on the other side for about another 30 seconds or until slightly golden. (You could also use a crepe maker.)

Note: Stack crepes in a pile placing a piece of wax paper between each crepe to prevent crepes from sticking together. Your crepes can be made the day before you need them placing them in a airtight container and keep refrigerate up to two days and rewarm in a crockpot on warm for about 1 hour before needed. Enjoy!
