Pre-seasoned Chicken Thighs from Macey’s Gorcery Store or add your own seasonings to raw Thighs.
Seared Chicken Thighs. Sear in 1-2 Tablespoons olive oil on medium heat 5-6 minutes on each side. Sear only three at a time and use splatter cover.
Roughly chop potatoes and place in bowl of water, drain and then add to crockpot.
I used a crock pot liner and then added Potatoes and Sweet Potatoes and add the broth.
Place Seared Chicken on top of Potatoes. Then tuck in 6 cloves of Garlic, 3 Bay Leaves and 4 Sprigs of Thyme. (These are for flavoring only remove after cooking.)
Optional: 1 can Diced Tomatoes, 2 tablespoons Tomato Paste and 2 teaspoons Chopped Parsley.
Cook 4 – 6 hours on low depending on your slow cooker instructions.
Enjoy.
