Parfait (Cookie Dough-Chocolate Brownie & Peanut Butter Cream)

My daughter Jacque got these cute little glasses at Ross they worked well for this dessert.

Jacque used Christmas Chocolate Orange Shavings for the top which gave it a yummy unique flavor.

Her recipe is a real keeper. I have never tasted a better parfait.

Are you ready to make this recipe?

Jacque’s Parfait

We will start with the bottom layer and work our way up the glass. Use a Pastry Bag with your choice of tip to layer frosting and Mousse.

Brownie Layer

Use any Brownie mix that is your favorite and bake as directed on package. (Make sure you don’t over bake brownies you need them to be soft.) Cool, cut into squares and crumble 2 to 3 squares depending on how many Parfaits you are making for your guests. Jacque used 6 small glasses and one large glass.

She used a Dark Brownie Mix with Chocolate Chips.

Place about 1 inch of brownie in the bottom of each glass.

Caramel Topping

She used a bottled Caramel for Ice -Cream. Try to find one that is more of thicker topping.

Squeeze or pour about a 2 teaspoons more or less depending on your glass size.

Whipped Cream Frosting

You can use canned Whipped Cream Frosting or make your own. This is a good Frosting recipe from bubble crumb

Add one inch of Whipped Cream Frosting over caramel Layer.

Egg-less Cookie Dough

*1/2 cup Butter, softened
*3/4 cup Brown Sugar
*14 ounce can Sweetened Condensed Milk
* 1 teaspoon Vanilla
*3 cups Flour add more if to sticky, Pasteurize your flour (See Cooking Light) or buy Pasteurized Flour
* 1 cup Mini Chocolate Chips

Add ingredients in the above order and mix together until creamed. dough should be kind of crumbly but not dry. Refrigerate about an hour or until cold.

Add another inch of cookie dough. Don’t pack down each layer.

Brownie Layer. (This is your second Layer of Brownie)

Peanut Butter Mousse

*1/2 cup Peanut Butter
*6 ounces Cream Cheese, softened
*3 tablespoons Heavy Whipping Cream
*1/2 teaspoon Vanilla
*1/2 cup plus 2 tablespoons confectioners Sugar

Whip together until light and fluffy about 3 to 5 minutes.

This is your top layer.

Sprinkle top with chocolate shavings. We used Orange Flavored Chocolate, which added a great flavor.

You can freeze extra Brownie and Cookie Dough to have on hand when your in the mood to make more! Refrigerate extra Mousse and Cream Cheese Frosting.
