Creamy Pasta Salad

Macaroni Salad Ingredients:

*16 ounces package or box of small Shell Macaroni or Campanelle or small Salad Roni, cook according to directions, drained and rinsed with cooled water
*1/2 cup Shallots, minced (or Red Onion)
*1/4 Red Bell Pepper, diced
*1/4 Green Bell Pepper, diced
*1/4 Yellow Bell Pepper, diced
*1/4 Orange Bell Pepper, diced
*7-8 Pieces Cooked **Peppered Bacon, chopped small
*6 Hard Boiled Eggs, cooked, yolks removed and discard, dice the egg whites
*1/2 cup Cheddar Cheese, small cubes

Combine the above macaroni salad ingredients in a large mixing bowl and set aside and make dressing.

Creamy Dressing Ingredients:
*
*1 cup Olive Oil Mayonnaise
*1 cup Plain Greek Yogurt, more if needed
*1 teaspoon Yellow Mustard
*1 teaspoon Apple Cider Vinegar
*1 tablespoon Sugar
*1/4 teaspoon Onion Powder
*1/4 teaspoon Garlic Powder
*1/2 teaspoon Sea Salt

Mix well together the above dressing ingredients in a medium bowl. Then add to the macaroni salad and gently mix altogether. Add extra Greek yogurt if needed for desired creamy texture.

**Add 1/2 teaspoon Fresh Ground Pepper but only if you didn’t use peppered bacon
