Irish/Hibernian Brown Bread

*3 cups Whole Wheat Flour
*1 cup Bread Flour
*1/2 cup Old Fashioned Rolled Oats
*2 teaspoons Baking Powder
*1 teaspoon Baking Soda
*2 tablespoons Sugar, optional
*1 teaspoon Salt
*1 1/2 Buttermilk
* large Egg
*1/2 cup Butter, melted
*1/2 cup Raisins, optional

Preheat the oven to 400*F.

Whisk together the dry ingredients.

Beat in a bowl eggs, buttermilk and melted butter.

Combine the dry and wet ingredients by making a making a hole in the dry ingredients and pour the wet ingredients into this hole mixing in small amounts at a time.

After mixing the above add raisins if desired and place the dough on a floured surface and knead with small amount of wheat flour about 10 times. Form dough into a ball and with a razor blade or a really sharp knife cut a deep (+ ) plus sign (cross) and place in well-greased coated 8-9 inch cast iron pot or 8 inch round pan.

Bake the bread at 400*F. For 10 minutes, reduce temperature to 375*F. And bake another 30-40 minutes or until crust is golden brown and sounds hollow when tapped on the bottom of baked bread.

Place cooked bread on a cooling rack and cover until ready to eat. Eat bread within 12-24 hours or Freeze after bread has cooled completely. To freeze place bread in doubled plastic bread bags. It will keep for about a week in the freezer. Then remove from freezer, thaw and enjoy!
