This recipe is as lite as I think you can make these cookies without changing the taste and texture of the cookie.
Lite No Bake Oatmeal Cookies
**Makes 19-20 cookies, 2 tablespoons each
Ingredients:
*2 cups sugar, minus 3 tablespoons
*1/4 cup Jet Black Cocoa Powder, or favorite baking cocoa powder
*Pinch of Sea Salt
*1/4 cup Extra Light Olive Oil
*1/4 cup Butter
1/2 cup Milk of your choice, I used 2 percent Milk
*1/2 cup packed Powdered Peanut Butter, like Great Value Powdered Peanut Butter
*1 teaspoon Vanilla Extract.
*1 and 1/2 cups Old Fashion Oatmeal
*1 and 1/2 cups Quick Cooking Oatmeal
**Wax Paper
Instructions:
In a stock pot on medium low heat add the sugar, cocoa powder and salt, whisk together.
Add to the sugar mixture the butter, oil and milk. Bring to a boil (hot and bubbly) heat for 2 minutes, stirring as needed. Remove from heat and stir in the powdered peanut butter until incorporated.
Add oatmeal to the hot chocolate mixture and mix well. Use 2 tablespoon cookie scoop or 1/8 cup measuring cup and scoop oatmeal mixture in mounds onto wax paper or baking mat like a Silpat.
Allow to cool and enjoy!
