Snickerdoodle Cinnamon Chip Cookies

**Makes 3 dozen cookies (2 tablespoon cookie scoop)

*Silpat/Baking Mat or Parchment Paper

*1/2 Baking Sheet

Bake in a pre-heated oven, 350*F for 10-13 minutes, cool the cookies on the baking sheet before removing.

Ingredients:

*1 cup Butter,room temperature

*1 and 1/4 cups Granulated Sugar

*1/4 cup Brown Sugar

*2 teaspoons Vanilla Extract

*1/2 teaspoon Sea Salt

*2 and 3/4 cups All-purpose Flour

*2 teaspoons Cream of Tartar

*1 teaspoon Baking Soda

*1/4 teaspoon Ground Cinnamon, more for topping frosted cookies, optional

*1/4 cup Mini Cinnamon Chips, stir in after mixing dough, more for topping on frosted cookies

Instructions:

In a stand mixer on medium speed, cream together butter, granulated sugar and brown sugar. Then add the vanilla and salt, mix until incorporated.

Sift together in a mixing bowl; Flour, cream of tartar, baking soda and cinnamon. Then add 1/3 of the dry mixture at a time to the creamed mixture. Mix on medium-low speed just until combined.

Remove mixing bowl from mixer and stir in cinnamon chips. Scoop cookies onto baking sheet with mat or parchment paper and sprinkle on the cinnamon sugar mixture if desired.

Optional Cinnamon Sugar Mixture:

*4 tablespoons Granulated Sugar

*1/2 to 1 teaspoon Ground Cinnamon

Mix together in a bowl or sugar shaker. Sprinkle or shake on top of scooped cookies.

Cream Cheese Frosting, optional

*6 ounces Cream Cheese, almost room temperature

*1/2 cup Butter, slightly softened at room temperature

*1 teaspoon Vanilla Extract

*Pinch of Sea Salt

*3 to 4 cups Powdered Sugar, adding as needed

Instructions:

Cream together the cream cheese and butter with hand mixer on medium speed. Then

add vanilla, salt and then gradually add the powdered Sugar 1/2 cup at a time. Mix until smooth and a good piping consistency.

Fill a pastry bag with a round tip ( #10 Wilton tip or desired pastry tip) with frosting. Pipe on frosting, starting in the middle of the cookie, piping in a continuous circle, until you get to the edge of the cookie. Repeat for each cookie or as desired. Top each frosted cookie with cinnamon chips.
