Soft Tacos

We usually grab the taco packaged seasoning and add to our tacos but we decided to make our own seasonings for the meat so we could control what goes in the seasoning mix. This is what we came up with and we really liked how it flavored the meat and this made a great seasoning for us, I hope you enjoy it too!

Soft Tacos

Taco Meat

*2 pounds Ground Hamburger, extra lean
*1/2 teaspoon Oregano
*1/4 teaspoon Cumin
*1/4 teaspoon Smoked Paprika
*1/4 teaspoon Red Pepper Flakes, or to taste
*1/2 teaspoon Salt, or to taste
*1/4 teaspoon Black Pepper, or to taste
*3 tablespoons Worcestershire Sauce
*3 Garlic Cloves, minced or pressed
*1 medium Onion, minced or diced
*1/2 Green Pepper, diced
*1 cup Tomato Puree or 1 small can Tomato Paste plus 1/2 cup water

On medium heat in a large Cast Iron pot/frying pan or Stainless Steel Stock Pot cook all the above ingredients except for tomato purée/tomato paste, water and until no longer pink and onions are translucent and most of the liquid evaporated.

Serves about 12 Soft Tacos.

Soft Tortillas and Toppings:

*12 soft Tortillas
*Lettuce, shredded
*Olives, sliced
*Tomatoes, Diced
*Shredded Mild Cheddar Cheese

Layer the soft taco ingredients as desired.

Baked Chicken Tenders

Baked Chicken Tenders

*24 Chicken Tenders, rinsed and dried

Dip or I used my hands to spread on the Chicken Tenders in the following combined mixture, and then into the crushed corn flakes.

*2 cups Olive Oil Mayonnaise
*1 cup Shredded Parmesan Cheese
*1/2 teaspoon Smoked Paprika
*1 teaspoon Deverle’s Seasoned Salt, or seasoned salt of your choice
*1 teaspoon fresh ground Pepper
*1 teaspoon Garlic Powder
*1 teaspoon Onion Powder
*1 teaspoon Italian seasonings
*Cayenne Pepper, to taste

*3 cups crushed Corn Flakes, 6 cups un-crushed

*Drizzle with 4 tablespoons of melted butter over covered Chicken Tenders just before baking

Pre-heat the oven to 400*F. Bake using 2 Silpat or parchment covered half baking sheets for 30-40 minutes or until juices run clear (internal temperature 165*F.) being careful not to over bake.

Use your Favorite Dipping Sauces we used Honey Mustard.

Honey Mustard Dipping Sauce.

*1 cup of Olive Oil Mayonnaise
*4-5 tablespoons Honey
*4-5 tablespoons prepared Yellow Mustard
*Salt and Pepper to taste

Mix together and serve in little dipping cups.
