Hot Cocoa Station

Having a Winter Sledding Party?  Enjoy having friends and family over after a long afternoon of sledding, snowmobiling or any cold winter activity.

Fill a Thermos full of hot water and your favorite hot chocolate recipe or see our link below for hot cocoa  recipes.  Use cute paper hot drinking cups, we purchased from Walmart and the printable are from Kara’s Party.

Fill a jar full of miniature marshmallows and dip some candy canes in Chocolate Melting Wafers.

Light Hot Dark Chocolate Mix

*1/2 cup Hershey’s Special Dark Cocoa

*2 cups Powdered Milk

*1/2 cup Powdered Coffee Creamer, no sugar added

*1 box Sugar Free Chocolate Fudge Pudding Mix

*3/4 cup Splenda or 1/2 cup Stevia

*1/2 cup mini Chocolate Chips

*1/8 teaspoon Sea Salt

In a blender, pulse together (pluse-stir-pulse stir, etc…) the above ingredients until everything is combined well. Store in an airtight container.

When serving add 3-4 tablespoons of dark chocolate mix to 1cup hot water or for extra creaminess add to warmed milk of your choice.

Mandarin Orange Cranberry Salad

Mandarin Orange Cranberry Salad

Note: Cranberries need to marinade (in a bowl) the sugar and lemon juice 6-8 hours or overnight

*1 (12 ounce) package Fresh Cranberries, rinsed, dried and chopped in the food processor
*1 1/4 cups Sugar
*Juice from 1/2 Lemon
*2 (8 ounce) containers Cool Whip, thawed in fridge
*1 (24 ounce) low-fat Cottage Cheese
*1 (6 ounce) package Raspberry or Cranberry or Orange Jell-O
*1 to 2 (11 ounce) cans Mandarin Oranges, drained

Garnish with chopped cranberries and mandarin oranges if desired.

After the cranberries have marinated, place cranberries in strainer and remove as much liquid from the cranberries as possible. Now place cranberries in the center of a layered piece of cheese cloth or strong paper towels and again squeeze out as much juice as possible.

In a large bowl mix together the cool whip and Jell-o until incorporated. Then add the cottage cheese, chopped cranberries and mix together.

Cover bowl with plastic wrap or airtight container and refrigerate until ready to serve.
