Granola Pancakes
**Makes 8 Pancakes using an Ice-Cream scoop
**Pancake Griddle or Skillet (medium heat)
Ingredients:
*2 cups Whole Wheat Pancake Mix, like Red Rose
*1/2 cup Old Fashion Rolled Oats
*1/4 cup Granola, more for topping
*1 and 1/2 cups Milk
*1/8 cup Brown Sugar
*2 teaspoons Vanilla Extract
*2 tablespoons Avocado Oil or Vegetable Oil
*2 Eggs
*1/8 cup Strawberry Jam
Toppings:
*Strawberries, chopped
*Favorite Granola or Recipes Links Below
*Strawberry or Vanilla Yogurt
*Maple Syrup and or Honey
Directions:
Whisk together in a mixing bowl the pancake mix, oats, granola, milk, brown sugar, vanilla, oil, eggs and strawberry jam. Mix together until combined, it can have a few lumps. Then fold in the soda. Allow the batter to rest at least 30 minutes or overnight in the fridge.
When ready to make, turn on 10 inch skillet or griddle to medium heat, we used an ice-cream scoop full. Spread around in a circular motion on skillet or griddle, cook 2 to 3 minutes or until golden brown, flip and cook another 1 to 2 minutes. Serve them hot/warm with toppings of choice.
